I forgot to post my plan last week and even though I had actually written one out on paper, I found it harder to stick to it. So, I am hoping that by getting it posted this week I will be more successful.

I must say that I am a little bit in shock that it is now February. Ummmm.....excuse me but didn't we just celebrate Christmas like a week ago?? Is is just me or did the month of January drag on and on when we were younger?

Anyway, on to the plan. I am trying to trim down the budget a bit. Things are really tight for us. Kerry has lost almost all of his overtime, something we have depended on for many, many years to see us through each month. I am very thankful we both still have jobs. Anyway, I can usually get my dinners simplified i the cost department, but it is the convenience foods I purchase for lunches and snacks for those teenage boys of mine that is killing my food budget. Any suggestions for some healthy cheap snack ideas for big kids???

Monday:
Hearty Penne Beef, Biscuits, Peas, Baked Peaches

Tuesday:
Chicken Tortilla Soup, Cheese Quesadillas

Wednesday:
Church Supper

Thursday:
Hamburger Stir Fry, Egg Rolls (from favorite Chinese restaurant) Mandarin Orange cups

Friday:
Pizza

I was just thinking the same thing about January. Isn't it the month that usually takes forever to get through? And here we are, February already!

I would be interested in some cheap snacks, too. My kids like tortillas with peanut butter spread on them. I buy the small ones and they put pb on them and zap them for a few seconds. My daughter loves fruit, but those little Clementines, as delicious as they are, get expensive when the kids have two or three at a time!

I see the writing on the wall...This will be my dilemma soon.

Hard boiled eggs are very filling. Ramen noodles are very cheap. Rice,stir-fried or plain, buttered noodles/pasta. My friend does the 99 cent pizzas (but my boys are really picky about that). Soup--homemade is cheaper in my opinion. If they eat beans, those seem to go a long way.

Sorry for Kerry's OT loss. My husband recently went full time after being a contractor. We were blessed by the chance for full-time (that illusion of stability) and the benefits helped. But it was a noticeable pay cut. But just to have work right now is a blessing.

The menu looks great!
