I forgot to post my plan last week and even though I had actually written one out on paper, I found it harder to stick to it. So, I am hoping that by getting it posted this week I will be more successful.

I must say that I am a little bit in shock that it is now February. Ummmm.....excuse me but didn't we just celebrate Christmas like a week ago?? Is is just me or did the month of January drag on and on when we were younger?

Anyway, on to the plan. I am trying to trim down the budget a bit. Things are really tight for us. Kerry has lost almost all of his overtime, something we have depended on for many, many years to see us through each month. I am very thankful we both still have jobs. Anyway, I can usually get my dinners simplified i the cost department, but it is the convenience foods I purchase for lunches and snacks for those teenage boys of mine that is killing my food budget. Any suggestions for some healthy cheap snack ideas for big kids???

food for the new year

It has been a while since I have had time to post my menu, but a new year is upon us, and after 2.5 weeks off from work/school, tomorrow finds all our down time coming to a screeching halt! Back to the schedules and demand of normal life....sigh... it was fun while it lasted though!

Our menu is going to consist of some new recipes this week. Kerry gave me a new crock-pot cookbook for Christmas and I have also subscribed to a magazine I love and usually find myself buying from the newsstand: Simple & Delicious by the Taste of Home folks.

I have links for just about all of the recipes--I think the chili one is the only one I haven't put up yet.

Sunday:
Chicken Tortilla Soup, Cheese Quesadillas

Monday:
Cincinnati Chili, Bacon muffins, Salad

Wednesday:

Thursday:
Chicken and Rice, Blueberry Muffins, Green Beans

Friday:
Pizza

Cheers and Happy Eating for 2009 everyone!

got food?

Another week, another plan. This was a hard week to plan for--with parent conferences, my Spanish class, my oldest son's birthday and his arrival home from college mid-week, and lastly Thanksgiving! And wow! When the heck did the holidays sneak up on us?

Sunday:
Dinner at this sweet girl's apartment. (and while I am trying to figure out how the holidays have snuck up on me, I might as well ponder how in the world I could have a married daughter!)

Monday:
Shells with Ham and 3 Cheeses (recipe to be uploaded later), Bread Sticks, Green Beans

Tuesday:
Scrambled Eggs, English Muffins, Fruit
(we have parent teacher conferences for Sam, and a mandatory school laptops parent meeting following the conference)

Wednesday:
Prosciutto Tomato Soup, Cheese Quesadillas
(Andrew home from college!)

Thursday:
Breakfast: traditional Thanksgiving morning breakfast of cinnamon rolls, eggs and sausage
Dinner: Turkey, stuffing, sweet potatoes, green salad, creamed onions, Grandma Hattie's homemade noodles in broth, mashed potatoes & gravy, relish plate, deviled eggs, pumpkin pie and apple crisp!!!!! Think it will be enough?

Friday:
Food? Who could possible need to eat after surviving Thursday?! :) Seriously, maybe we can take Andrew out for his birthday....#23!!!

It's going to be a week...

...I can just feel it....

I am in the process of trying to keep my temporary crown on my tooth until I can get a visit to my dentist squeezed in tomorrow. Yeah--that was real fun during church today, singing the doxology and realizing my crown had just lifted off--real fun. And, I have my Spanish class in the evening Monday, which I haven't even studied for all week.....And it is supposed to be kind of stormy tomorrow night.....nice...love to drive home in the dark in the middle of a rain/wind storm....

I have an all day, all staff retreat for work on Tuesday that I am not really looking forward to so much... and then maybe I can make it for the last little bit of Sam's last football game..

The bright spot of the week will be the Booster fund raiser dinner on Wednesday night--any time I can see/hear Austen (with Jazz Band) play jazz is a good night for me! Plus, time there is the added bonus of a dinner thrown in, so NO cooking for me that night!

For the rest of the week--here is my plan:

Sunday:
Ham, Cheese & Mushroom Omelets, English Muffins

Monday:
Cincinnati Chili, Chocolate Chip Muffins

Tuesday:
Eleanor Stew, Bran Muffins, Green Beans

Wednesday:
Jazz Band Booster fund raising dinner at Austen's school

Thursday:
Chicken Spaghetti, Bread Sticks, Green Salad

Friday:
Pizza
